Reasonable guesses, but wrong. Doing that sentences request in a long episode probably raised the difficulty a lot.

Oh! The sentences thing was my request. I can confirm that both sentences as I remember them are in there, though I think one of them replaces a pronoun with the antecedent of that pronoun, which makes it seem a bit more unlikely to have been an arbitrary sentence given to them. (That is, if I'd given them "My entire family is allergic to that", the thing actually said might have been something like "My entire family is allergic to Cap'n Crunch.") I didn't save a copy of what I submitted, though.

I can confirm that there is a replacement along those lines.

I would have sped up the sentences to shorten the episode a bit, but that would make it too easy to pick them out.

What's weird is that my sentence felt so forced when I was saying it, that I was sure people would be like "oh gosh that must be the sentence there! that makes no sense, why would anyone say that?"

So, I thought this was for sure the sentence, because I looked at the holidayinsights.com website and looked up Human Rights day, and the recipe was NOT THERE. But I was looking at the wrong Human Rights day.

Honestly, for a new player, 3000 turns isn't that bad. I mean, yes, for an experienced player that would be a very early death; but NetHack has a substantial learning curve, and a lot of people play for several days (or read a bunch of the NetHack Wiki) before they get to the point where they can consistently survive past about dungeon level three.

Also, I think the new moon may have made the wererat more dangerous than usual, though I don't remember the details just now. (I know what it does to cockatrices, but I don't remember exactly what it does to werefoo.)
