Actually, the real answer to the second one is "So your rescue party knows your approximate time of death." If you're not winding the watch, they'll know when you've died to within a day.

If you figure out when you are about to die or are traveling with someone, you can also break the watch, like in Pan's Labyrinth.

Yes, but you will probably faint for a few days before you die, thus making yourself unable to break your watch.
